Vanilla Ice Cream

I can't really recall where I found this recipe as it was a while ago but I thought I would share how to make vanilla ice cream without having an ice cream maker...super fancy hey!
Ingredients:
1 Vanilla Pod
250ml Milk
250ml Double Cream
100g Castor Sugar
4 Egg Yolks

Pour the milk into a sauce pan and heat it up but be careful not to let it boil. Cut the vanilla pod down the middle and place in the milk that has been taken off the heat and leave it to infuse for 20 minutes.

While the vanilla and the milk are infusing, get a bowl and mix together the eggs and castor sugar until it forms a thick mixture. Remove the vanilla from the milk and scrape the seeds into the milk, this creates a nice looking ice cream and also provides taste. Then pour the milk into the mixture of eggs and sugar, stirring it while you do so. Pour the mixture back into the pan and turn the heat up until it is near boiling point but do not let it boil. Keep stirring it until it becomes thick and a layer forms on the spoon. Remove the pan off the heat and then allow it to cool.

When the mixture is cool, place it in a container that will fit the mixture and then place that in the freezer. Freeze for 2 hours and mix it, breaking up the mixture and making it smooth. Then place it back in the freezer and check and stir it every 30 minutes making sure that the mixture stays smooth until it is ready for serving.
